Here is a seriously simple but very tasty recipe to use up the berries in a delicious cheesecake. A good recipe to get the kids involved in too. Mine particularly enjoyed hitting the biscuits into crumbs, and I particularly enjoyed arranging the berries into the union jack (feeling very patriotic after the opening ceremony of the Olympics!)
I don't faff about with measurements, just spoons, cups or packs of ingredients so you will have to adjust for what size you are making. We made 4 individual cheesecakes, I would double all ingredients for 1 large one.

What you need
Berries of course!!!
Any berries you like/ have picked. We've used strawberries, blackberries, blueberries and raspberries in previous ones but your could use redcurrants/blackcurrents etc too.
1 tub of cream cheese
2 tbsp of lemon curd
1 small packet of digestive biscuits
2 tbsp of unsalted butter

Steps
- Put the digestive biscuits into a tied sandwich bag and let the kids loose on bashing them with a rolling pin (lots of fun!) to crush them all into fine crumbs like sand.
- Slightly melt the butter either on the hob or microwave and open the bag to add to the crumb mixture. Re-tie and get the children to shake, rattle and roll it all together! If you are kids aren't helping, pouring the crumbs into a bowl and mixing in the butter is perfectly acceptable, just not as fun!
- Press the crumb mixture into the bottom of your tin/s and pop into the freezer for 10 minutes whilst you prepare the topping.
- Mix together the cream cheese and lemon curd until it is soft and fluffy.
- Take tin/s out of freezer and spoon on the topping.
- Add you berries on top and arrange as you want
DONE!!!!! How easy?
