There are many meals that can be adapted to the Pick 'n' Mix style but a firm favourite and first up in this series of recipes is good old pizza.
You will need
For the dough: You can either buy ready made bases, powder mixes which you add water to or make your own from scratch (Recipe here)
For the tomato sauce: 2 parts tinned chopped tomatoes/passata to 1 part tomato puree. We used a carton of passata with added garlic and olive oil which worked really well.
Toppings: Literally anything you want! This time we used oregano, cheese, sweetcorn, red onion, mixed peppers, tomatoes, ham, pineapple and mushrooms but I just use whatever I have in at the time, sometimes theres mozzerella, left over cooked sausages sliced up, cooked bacon, anything!!!!!
Steps:
Step One: Prepare base as above
Step Two: Put chopped tomatoes and tomatoe puree in a pan and bring to the boil, then reduce heat to simmer for 10 minutes. You can sieve the bits out if you prefer no lumps or just use passata. Allow to cool.
Step Three: Once cooled spread onto base, cover with grated cheese and then add toppings to your hearts content. Once done pop into a preheated oven Gas mark 7 for approx 15 minutes.
Lots of fun, you don't need to worry about preparing dinner because they've done it for you and I guarantee there won't be much left at the end of it. A wonderful way to get toddlers to eat vegetables!
